Quick Asparagus Smoked Chicken Stir-fry

I have to admit that the idea and inspiration for a lot of my cooking comes form one of my favorite food shows: Chopped!
My husband is not competitive and feels stressed watching the show, but to me it’s not about the competition (although I don’t mind winning 🙂 ) .
It’s much more about the creativity in the moment, to make something delish with what you have available.

My secret to quick and easy cooking

The other day I came home from work around 6 pm and it was my turn to put dinner on the table.
Fortunately I had already mentally prepared myself what I was going to cook, with what I already had in the fridge. And that’s my secret to quick and easy cooking.

So I had leftover smoked chicken from the day before, a bunch of (mini) asparagus and with my imagination running “wild”, I thought of a quick stir fry. Dinner was on the table in less than 30 minutes!

Steps to get dinner ready fast

Here’s how I got it done.
Step 1. Started with cooking rice in the rice cooker.
Step 2. Cleaned the asparagus, breaking off the tough part, and cut in 2 inch pieces.
Step 3. Cut onion and crush garlic, chopped chicken.
Step 4. Heated oil while rinsing (optional) cherry tomatoes (I like colorful food).
Step 5. Cook & stir fry for about 10 minutes, while cleaning up.

That’s it! Preparation is half the job, even if it’s only in your mind 🙂
So here’s my easy peasy recipe.

Quick Asparagus Smoked Chicken Stir-fry

Prep Time 12 minutes
Cook Time 10 minutes
Total Time 22 minutes
Servings 1

Ingredients
  

  • 1 lb asparagus bunch
  • 8 oz smoked chicken 2 thighs or any leftover chicken works
  • 1/2 onion sliced
  • 2 cloves garlic crushed
  • 6 cherry tomatoes optional
  • 1/2 tsp bouillon powder or salt
  • black pepper optional
  • 1 tbsp olive oil

Instructions
 

  • Break off tough asparagus parts, cut in 2 inc pieces and rinse
  • Chop smoked chicken
  • Heat oil in a wok or pot, adding onion & garlic
  • Add bouillon or salt and pepper, stir
  • Add asparagus (and tomatoes), stir for a few minutes (covered for 2 minutes to quickly cook crisp)
  • Add chicken, and quickly stir to distribute flavors evenly.
  • Sprinkle more salt if needed.
