Wanted: Juicy Roasted Turkey

It’s a week before Thanksgiving and the internet is flooded with anything turkey.
Turkey and Thanksgiving go hand in hand and many cooks, professional or not will serve this bird up for dinner.

Unless you’re a professional or seasoned chef, getting a juicy turkey may be one of the biggest challenges to get a happy face from your dinner guests. In our household, my husband is the turkey chef and I gladly stay out of the way. He does all the prep before turkey goes in the Green Egg and I’m usually too busy with coordinating the rest to see what he’s doing. All I know, is that he brines the turkey to make sure it’s juicy.

There is brining and brining

As I recently learned, there is wet brining and dry brining (which I know as dry rub or marinating). Apparently dry brining gets you better flavor and is a lot easier than wet brining. Just imagine, no bucket of liquid with turkey to carry around! After reading this article about the different brining techniques, I’m leaning more towards dry brining. But hey, I’m not the one cooking the turkey 🙂

How to get a juicy roasted turkey

Here are some tips in case you want to take on the challenge of the juiciest turkey of the year.

  • Cover with Mayo on the outside
  • Slather with butter everywhere, inside and out
  • Cover with bacon
  • Roast the turkey upside down (eh, breast down) and turn over at the end for crispy skin
  • Use the slow-cooker and broiler

Why these tips for juicy turkey work

  • All the grease of mayo, butter or bacon will keep your turkey from drying out.
  • Roasting upside down will allow the juices to soak into the thickest part of the turkey: the breast.
  • The slow-cooker technique is guaranteed to deliver a moist turkey, and you can finish up under the broiler or grill to get the crispy skin.

It seems to me that you just cannot get a dry turkey if you follow any of the tips above, so go for it.
