Easy Chicken Cordon Bleu Casserole

Try this recipe and never look back! I’ve made this Chicken Cordon Bleu casserole so many times and it is always a favorite, gone in no time!

Easy casserole

Casseroles are by nature easy dishes, but even though this is not a 5-minute prep dish, it does not require any chopping or crushing of onions and garlic. I use onions and garlic in almost all of my cooking so I was a bit skeptical the first time I made Chicken Cordon Bleu casserole. Believe me, it tastes so good you don’t even miss onions, garlic or other herbs. But if you insist, you could still add anything for extra flavor, just not salt because some ingredients have plenty.

Cordon Bleu

Cordon blue is French for Blue Ribbon, a term used to reference food prepared to high standards or by excellent cooks.

Traditional cordon bleu is an entrée made with flat pounded veal or pork, stuffed with ham and cheese, rolled in breadcrumbs, then fried or baked.

However, if you’re trying to save time, then this is a much quicker way to go: a casserole that is a lot easier to share with a crowd. Added bonus: kids love it, guaranteed! (unless they don’t like cheese or ham 🙂 )

Easy Chicken Cordon Bleu Casserole

Ingredients
  

  • 1 egg
  • 1/2 cup milk
  • 2 pounds skinless boneless chicken breast halves - cut into chunks
  • 1 cup plain dried bread crumbs
  • 1 cup oil for frying
  • 8 ounces Swiss cheese cubed
  • 8 ounces cubed ham
  • 1 10.75 ounce can cream of chicken soup
  • 1 cup milk

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg and 1/2 cup milk together until combined.
  • Stir in the chicken chunks to coat, then drain, and coat with bread crumbs.
  • Heat oil in a large skillet to 375 degrees F (190 degrees C).
  • Fry breaded chicken cubes in hot oil until golden brown on all sides, then remove, and drain on paper towels.
  • Place chicken cubes in a glass baking dish, along with the Swiss cheese, and ham.
  • Stir together the soup with 1 cup milk, pour over casserole.
  • Bake in preheated oven until golden brown and bubbly, about 30 minutes.
