Instant Pot Farmhouse Chicken Fricassee

Who doesn’t like juicy, savory chicken on their plate? Chicken Fricassee is just that!

Fricassee is a compound French word that loosely translates into “fried” and “in pieces” and is a style of cooking meat by braising cut up pieces and served in its own, traditionally, creamy sauce. Julia Child described it as a cross between a sauté and a stew, since the cut up meat is first sautéed (lightly fried) before liquid is added to finish cooking into a stew.

Fun Fact: Did you know that this style of cooking has been around in France since the 1300s?

I didn’t! Just love any version of fricassee, and I often make the Colombian version (to be shared soon), but when I was browsing my pressure cooker cookbook, I found this recipe for Farmhouse Chicken Fricassee and turned it into my Instant Pot version. Why not? There are others, using the slow cooker or traditional stove top cooking, but using my Instant Pot will keep the house cooler than traditional cooking and it saves time. So, without any further ado, here’s the recipe for you to try out.

Instant Pot Farmhouse Chicken Fricassee

Ingredients
  

  • 1 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 3-4 lb chicken cut in serving pieces
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3 medium carrots cut in 1-inch pieces
  • 2 celery ribs cut in 1-inch pieces
  • 1 small onion sliced
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth or 1 tbsp powder mixed with a cup of water
  • 1 tsp dried marjoram I like fresh better
  • 1 tbsp minced fresh chives
  • 1 tbsp minced fresh parsley
  • 2 cloves garlic minced (optional - I added for more flavor)

Instructions
 

  • Wash and pat chicken dry, then season with salt and pepper (and garlic).
  • Set the Instant Pot on the Sauté setting to melt the butter with oil.
  • Add chicken in batches to brown on each side for about 5 minutes.
  • Put all chicken pieces back in the pot and add onion. Stir for about 2 minutes.
  • Add carrots, celery and turn over.
  • Sprinkle flour and stir in, cooking for 2 minutes.
  • Add broth (bouillon) and marjoram.
  • Switch from Sauté setting to Pressure cooking
  • Cover the Instant Pot and cook for 10 minutes.
  • Release pressure and transfer the chicken to a platter or dish.
  • Garnish with chives and parsley.
  • Skim fat from the juices and either serve separately, or spoon over chicken.

Tip: Chicken is most often used, but all kinds of meat, poultry, fish, and even vegetables alone, can be used in fricassee dishes.
